GARLIC-PARMESAN TOAST 
2 garlic cloves
3 tbsp. olive oil
1 loaf Italian bread
1/4 c. chopped parsley
3 tbsp. grated Parmesan cheese

Preheat oven to 400 degrees. With flat side of knife, crush garlic cloves. In saucepan over medium heat, in hot olive oil, cook crushed garlic until golden; discard garlic.

With serrated knife, slice bread diagonally into thin slices. Arrange bread slices on cookie sheets and brush with garlic-flavored olive oil; sprinkle with chopped parsley and grated Parmesan cheese. Bake 8-10 minutes until toast slices are golden brown. About 90 calories each.
