BROCCOLI SOUP 
#1:

1 sm. onion, sliced thin
1 sm. "rib" stalk of celery, sliced without leaves
1 tbsp. butter
1/2 c. water

#2:

2 tbsp. uncooked rice
2 c. chicken broth
1/4 tsp. cayenne pepper or less

#3:

2 c. cooked broccoli, coarsely cut and the liquid

#4:

1/2 c. milk or cream

#1 - Simmer #1 slowly about 2 minutes, medium heat. #2 - Simmer 15 minutes together with #1. Do not boil. Use blender on # 1 and 2 - liquify and return to saucepan. Use blender on #3 - liquify and add to #1. Add #4 to suit thickness desired - do not boil.
