BROCCOLI SOUP 
1 1/2 sticks Parkay
2 bunches shallots, chopped
2 (10 oz.) boxes broccoli spears, thawed
1/4 c. flour
2 cans Campbell's chicken broth
1 qt. milk
4 oz. sour cream
4 oz. grated Cheddar or American cheese
1 sm. can mushrooms (optional)
Salt and pepper
Pinch of cayenne pepper

Saute green onions in butter until soft. Add broccoli. Cook until tender. Stir in flour until mixture is smooth. Add chicken broth and milk. Stir well. Add sour cream and cheese. Blend well. Add spices. Bring to a boil. Reduce and simmer for 15 minutes.
