GOLDEN PUMPKIN LOAF 
1 c. sugar
1 (16 oz.) can pumpkin
1 tsp. pumpkin pie spice
1/2 tsp. nutmeg
1 egg
3 c. buttermilk baking mix
1/2 tsp. cloves

Heat oven to 350 degrees. Generously grease loaf pan with shortening, using pastry brush. Beat 1 cup sugar, 1 egg and the pumpkin in mixer bowl on medium speed 30 seconds. Gradually beat in remaining ingredients on low speed just until smooth. Pour into the greased loaf pan. Bake at 350 degrees for 1 hour and 10 minutes or until wooden pick inserted in center comes out clean. Cool the pumpkin loaf 10 minutes on rack, then remove from the pan. Serve warm or cold.
