MINI CHEESECAKES 
Vanilla wafers
1 (8 oz.) cream cheese
1 tbsp. lemon juice
1 tsp. vanilla
3/4 c. sugar
2 eggs
1 can blueberry or cherry pie filling

Cream cheese and sugar well. Add lemon juice, vanilla and eggs. Beat well. Place 1 to 2 1/2 tablespoons of filling on a vanilla wafer in a cupcake paper, 3/4 full. Cool. Place 1 tablespoon pie filling on top of cool cheesecake. Makes about 12 regular cupcakes.
