PIROHI 
2 c. flour
1 tsp. salt
1 tbsp. melted butter
1 egg or 2 egg yolks
1/2 c. water (cool)

Cool water makes softer dough. Mix flour and salt in a deep bowl. Add eggs and butter and enough water to make a medium soft dough. Too much kneading will toughen the dough. Divide in 2 parts. Cover and let stand 10 minutes. Roll dough thin. Fill; pinch edges. Boil rapidly for 3 or 4 minutes or until well puffed and come to top (maybe 10 minutes).

FILLING:

Mashed potatoes
Longhorn Colby cheese
Salt
2 c. dry cottage cheese
1 egg, slightly beaten
Sauteed onions in butter
