BRAN MUFFINS | |
4 c. All Bran, soaked in 2 c. boiling water 2 c. Nabisco 100% Bran, soaked in 1 qt. buttermilk 1 c. butter 3 c. white sugar 4 eggs, beaten 5 c. flour 5 tsp. baking soda 1 tsp. salt 2 c. raisins, nuts or dates Cream shortening and sugar. Add eggs. Add Nabisco and buttermilk. Stir in flour, soda and salt. Add to above mixture. Add All Bran until moist. Pour in raisins. Store covered in refrigerator up to 6 weeks. Pour into greased muffin tins (or paper lined), 2/3 full. Bake at 375 degrees for 20 minutes. They are done when they are not moist or shiny on top. Makes a bunch, at least 36. |
