SPINACH - ORANGE SALAD 
4 c. spinach leaves, torn
1 (11oz.) can mandarin oranges, drained
1/2 c. sliced, peeled red onion
3 tbsp. distilled white vinegar
2 tbsp. vegetable oil
1 tbsp. honey
1/2 tsp. salt
few grains black pepper
2 tbsp. slivered almonds (optional)

Remove coarse stems from spinach, then wash and dry leaves. Tear spinach into bite sized pieces; add orange slices and onion; toss gently to mix. Mix together vinegar, oil, honey, salt and pepper; pour over spinach. Sprinkle almonds over the top.

Serves 4.
