CHOCOLATE ZUCCHINI CAKE 
1/2 c. oil
2 c. grated zucchini
1/2 c. buttermilk or sour cream
4 tbsp. cocoa
1/2 tsp. cinnamon
1/2 c. butter
2 1/2 c. flour
2 eggs
2 tsp. baking soda
1 3/4 c. sugar
1/2 tsp. salt
1/2 tsp. vanilla

Mix butter, oil, sugar, zucchini, flour, buttermilk, cocoa, eggs, vanilla, cinnamon, salt, and soda in order. Grease a 9 x 12 inch cake pan; pour in batter. Sprinkle with topping: 1/2 cup coconut, 1/2 cup chocolate bits and 1/2 cup chopped nuts. Bake at 325 degrees for 45 minutes or until done.
