NAN'S ZUCCHINI SUPREME 
4 c. sliced sm. zucchini
2 c. boiling water
2 eggs
1 c. mayonnaise
1 onion, chopped
1 c. green pepper, minced
1 c. grated Cheddar cheese
2 c. Ritz crackers, crushed
1 tbsp. butter
Salt and pepper

Reserve 1/2 cup cheese for topping. Toss cracker crumbs in hot butter for topping.

Cook zucchini in boiling water until tender crisp. Drain.

In a large bowl beat the 2 eggs. Stir in onion, mayonnaise, green pepper, cheese, salt and pepper. Add zucchini. Place mixture in a greased casserole. Sprinkle on cheese and crumb topping and bake in a 350 degree oven for 30 minutes.
