MELT-AWAY CHEESE ROUNDS | |
3/4 c. butter and/or butter 3 c. shredded sharp cheddar cheese 1 1/2 to 1 3/4 c. all-purpose flour paprika or poppy seed for garnish (optional) dash salt 1 tbsp. poppy seed or paprika Cream butter in food processor or mixer until light and fluffy. Add cheese, flour, salt, paprika or poppy seed. Form to a dough. Chill dough for about 2 hours. Shape dough into small even balls. Place on greased cookie sheet. Sprinkle with some extra paprika or poppy seeds, if desired. Bake balls at 400 degrees for about 10 minutes or until just baked through. The rounds should never get browned. Cool on the cookie sheet. Remove carefully. Store in airtight containers until ready to serve. When serving, reheat for a few minutes at 400 degrees until slightly warm. |
