CANDIED CARROTS 
2 lbs. fresh carrots, cleaned
3 tbsp. vanilla
1 c. sugar
1 tbsp. honey
1 stick butter

Cut carrots into pieces about 2 to 3 inches. Put in large pot and fill with water to 3 inches from top. Cook carrots on high heat until fork tender, but not soft. Add remaining ingredients and continue to cook on medium-low for 45 minutes or until soft.
