DATE PUDDING CAKE 
1 c. water
1 c. dates, chopped
2 tsp. baking soda
1 c. mayonnaise or salad dressing
1 c. granulated sugar
2 c. flour

In saucepan bring water and dates to boil and simmer until dates are soft. Either mash them with a potato masher or spin them in food processor until they are mush. Add baking soda, mayonnaise, sugar and flour. Pour into greased 8 x 8 inch pan. Bake at 350 degrees about 35 minutes, testing with toothpick until it comes out clean from center of cake. Serve with whipped topping or frosting.
