GRANDMA'S CASSEROLE 
1 tbsp. plus 1 tsp. reduce calorie butter
1 c. chopped onion
1 med. green pepper, chopped
1 c. chopped celery
20 oz. ground turkey or 16 oz. cooked ground beef
1 tsp. seasoned salt
Pinch oregano and garlic powder
Dash artificial sweetener
16 oz. can tomatoes, drained
2 c. tomato sauce
2 c. water
1 c. sliced mushrooms
8 oz. Mozzarella cheese, shredded
8 oz. uncooked macaroni noodles
1/2 tsp. pepper

In a non-stick skillet, saute onion, green pepper, and celery in butter until transparent but still crisp; add remaining ingredients except noodles and cheese. Simmer 20 minutes. Spoon enough mixture to cover the bottom of a 9 x 13 inch pan. Cover with uncooked noodles. Spoon remaining sauce over top. Sprinkle with cheese. Bake, uncovered at 350 degrees for 45 minutes. Remove from oven, let stand 15 minutes before slicing. Serves 8. (Weight Watchers - 2 protein, 1 cheese, 1 bread, 1/2 fat, 2 vegetables).
