VEGETABLE CASSEROLE 
1 can mixed vegetables (Veg All, drained)
1 can sliced water chestnuts, drained
2/3 c. mayonnaise, regular or light
1 sm. onion chopped or 1 tbsp. onion flakes
2 c. shredded cheddar cheese
Ritz cracker crumbs, crushed
Butter

Mix vegetables, water chestnuts, mayonnaise, onion and cheese. Spread in a 2 quart casserole dish. Top mixture with layer of crackers. Dot with butter. Cover casserole and bake in oven 350 degrees for 20 minutes. Place in microwave dish, do not cover. Microwave on High for 10 to 12 minutes, or until hot.

Since microwave ovens vary in power, you may need to adjust your cooking time.
