PUMPKIN PECAN CAKE 
1 pkg. spice cake mix
1 c. canned pumpkin
1/2 c. cooking oil
1 pkg. vanilla instant pudding mix
3 eggs
1 tsp. cinnamon
1/2 c. water
1/2 c. chopped pecans

Adjust recipe according to package directions on cake mix for altitude, taking into account the 1/2 cup of water. In large bowl, combine first 7 ingredients, beat at medium speed for 5 minutes. Fold in nuts. Bake in greased and floured 12 cup bundt pan at 350 degrees for 40 to 45 minutes or until cake tests done. Cool in pan 10 to 15 minutes. Turn out on wire rack or serving plate to complete cooling. Serve with whipped cream.
