QUICK FRIDAY SPECIAL | |
Butter 1 fish fillet or thin fish steak per person (sole, red snapper, etc.) Flour 1/4 c. minced onion Salt and pepper 1/4 c. butter, melted Juice of 1/2 lemon 1/2 c. California white table wine Chopped parsley Lemon wedges Heat oven to 450 degrees. Line shallow baking pan with foil (makes cleaning a cinch); place in hot oven. When hot, brush pan well with butter; arrange fish in pan. Dot each piece with butter; sprinkle lightly with flour, onion, salt and pepper. Combine 1/4 cup melted butter, lemon juice and wine. Bake fish in hot oven (450 degrees) about 10-15 minutes, basting frequently with butter-wine mixture. Serve with chopped parsley and lemon wedges. Since this is a quick meal, we usually have this dish with French fried potatoes, a crisp green salad and French bread. |
