ORANGE ROUGHY WITH BASIL AND
LEMON
 
3 tbsp. butter, softened
1/2 tsp. dried basil leaves
3/4 lb. orange roughy or white fish fillets
4 slices lemon

In small bowl stir together butter and basil leaves. Place fillets on greased broiler pan. Spread one side of fillets with 1/2 butter mixture. Broil 5 to 8 inches away from heat for 5 minutes. Turn fillets over; top with remaining butter mixture and lemon slices. Continue broiling 5 to 6 minutes or until fish flakes with a fork. Yield: 2 servings.

Microwave Directions: Prepare recipe as directed above except place fillets in 9 inch square baking dish. Spread one side of fillets with 1/2 butter mixture. Cover with plastic wrap, leaving a vent in 1 corner. Microwave on HIGH 2 minutes. Turn fillets over; top with remaining butter mixture and lemon slices. Cover; microwave on HIGH 2 to 4 minutes or until fish flakes with a fork.

Since microwave ovens vary in power, you may need to adjust your cooking time.
