FAMILY FAVORITE TURKEY LEFTOVERS 
This recipe is an excellent way to use leftover turkey after a holiday meal and it is one of the favorites of the men in our family. It has been a family tradition for as long as I can remember (long time).

3 cups chopped cooked turkey
3 cups white rice, cooked (we use Basmati)
1 (10 oz.) box frozen chopped spinach
1 tbsp. chopped garlic
3 tbsp. butter
1/4 cup olive oil
1 cup feta cheese
1 cup sliced almonds, toasted
salt and pepper, to taste

Ahead of time, cook or steam the rice according to package directions. Toast sliced almonds until golden brown in an oven.

In a larger fry pan, over medium heat, melt the butter into the olive oil and garlic and add the frozen spinach. Cook the spinach until thawed and warm and liquid is reduced, stirring occasionally to coat all spinach with the garlic butter.

Add the chopped turkey and cooked rice and continue to cook, adding a small amount of water as necessary and stir frequently.

When mixture is heated through, transfer portions to plates and season with salt and pepper. Top with sliced toasted almonds, sprinkle with feta cheese. Serve with fresh homemade biscuits.
