SOUR CREAM POTATO SALAD | |
6 med. potatoes 1 sm. minced onion 2 tsp. salt 4 tbsp. sugar 1/4 tsp. black pepper 3 hard cooked eggs 2 tbsp. vinegar 1 c. sour cream 1/2 tsp. mustard (dry) 6 slices lean bacon, fried Cook potatoes in skins. Peel when cool, cut in half lengthwise. Slice fairly thin. In large bowl combine potatoes and onion. Crumble bacon. Add salt, sugar, pepper, 2 of the eggs diced (vinegar, sour cream and mix; add mustard and stir again; combined as dressing). Slice remaining egg to garnish with when ready to serve. 1/2 cup sweet chopped pickles can substitute sugar. |
