GERMAN APPLE PANCAKES 
3 lg. eggs
3/4 c. milk
3/4 c. flour
1/2 tsp. salt
1 1/2 tbsp. butter
2 tbsp. butter
Cinnamon
1 lb. tart apples, cored, peeled and sliced (2 3/4 c.)
1/4 c. sugar
Nutmeg
Powdered sugar for topping

Preheat oven to 450 degrees. To prepare the pancake: Beat together eggs, milk, flour and salt until very smooth. In a heavy 12 inch skillet, melt the 1 1/2 tablespoons butter. As soon as the butter is hot, pour in batter and put the skillet in the oven. Bake for 15 minutes then lower the oven temperature to 350 degrees and continue baking another 10 minutes. Pancake is done when it is light brown. Apple Filling: Melt 2 tablespoons butter in large skillet, add apples and sugar. Season to taste with cinnamon and nutmeg. Saute apples 8 to 10 minutes or until apples are tender. When pancake is done slide it onto an oval plate. Pour apple filling onto half of pancake and fold the other half on top. Sprinkle with powdered sugar then serve. Serves 4 to 6 people.
