ZUCCHINI COOKIES 
1 1/2 c. flour
1 3/4 c. oatmeal (rolled oats)
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 c. raisins
1/2 c. flaked coconut
1/2 c. butter
3/4 c. brown sugar
1 c. grated zucchini
1 egg
1/2 tsp. vanilla

Beat butter and sugar; add eggs and vanilla; beat; add zucchini, then all dry ingredients. Drop onto greased cookie sheet. Bake 5 to 10 minutes at 375 degrees.
