ZUCCHINI COOKIES 
1 1/2 c. flour
1/2 tsp. salt
1/2 tsp. nutmeg
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. cloves
1/2 c. butter
2/3 c. honey
1 c. ground zucchini
1 egg, beaten
1/2 c. rolled oats
1 c. dates, chopped fine
1 c. chopped nuts
1/2 c. shredded coconut (opt.)

Stir together dry ingredients. Put butter, honey, zucchini and egg in bowl and beat for 3 minutes. Combine blended mixture with dry ingredients. Add oats, dates, nuts and coconut. Drop by heaping spoonfuls onto oiled cookie sheet. Bake at 325 degrees for 15 minutes.
