POTATO FUDGE IT 
1 med. potato
1 lb. confectioners sugar
8 oz. pkg. coconut
1 tsp. vanilla
3 pkg. Hershey baking squares

Boil and cool the potato. Mash with fork until no lumps. Mix together sugar and coconut. Combine very slowly with potato. Add vanilla. Butter an 8 x 8 inch tin. Pack mixture in pan. Melt chocolate in double boiler. Pour evenly over potato mixture and refrigerate.
