SPANISH RICE 
1 (14 oz.) can stewed tomatoes
2 tbsp. vegetable oil
1/6 c. chopped green pepper
1/2 c. chopped onion
1 1/2 c. long grain rice
1 qt. water
2 tsp. salt
1/8 tsp. pepper
1/8 tsp. red pepper
1/8 tsp. cumin
1/8 tsp. garlic powder
1/4 tsp. chili powder
1/8 tsp. oregano

Cook all above ingredients together until water is absorbed into rice, then add 1 1/2 cups tomato juice. Simmer until serving time.
