3 slices bacon, chopped 1 med. onion, chopped 1 med. apple, cored & chopped 1 (8 oz.) can sauerkraut, Bush's Bavarian, rinsed & drained 1 lb. smoked Polish sausage (Kielbasa) 6 honey wheat English muffins, split & toasted or rye bread In large skillet, cook bacon over medium heat 3 minutes. Add onions and apple; saute 2 minutes. Reduce heat to low, add sauerkraut; stirring often. Simmer 10 minutes. Grill or broil sausage 6" from heat. Turn once or twice, about 12 minutes. Cut diagonally into 1/4" slices, place on bottom muffin or rye bread halves. Top with sauerkraut mixture and remaining muffin halves, or toasted rye bread. (I use whole wheat rolls too.) Makes 6 servings. |
