SWEET POTATO CUSTARD 
1 c. potatoes, cooked and mashed
1 1/2 c. sugar
2 tbsp. flour
1 tsp. vanilla
1 tsp. lemon juice
1 sm. can evaporated milk
1 stick butter, melted
Pinch of salt
1 egg
1 uncooked pie shell

Mix flour and sugar well. Add all other ingredients, beat with electric mixer until creamy. Pour into pie shell. Bake in preheated oven 10 minutes at 450 degrees, then 30 minutes or until brown at 350 degrees. Very important to bake correctly.
