SWEET CORN MUFFINS 
1 1/2 c. flour
3 1/2 tsp. baking powder
2 tbsp. sugar
3/4 tsp. salt
1 (7 oz.) can corn niblets, drained
1 egg, lightly beaten
3/4 c. milk
3 tbsp. melted shortening

Combine flour, baking powder, sugar and salt. Add corn. Combine egg, milk and shortening. Add to dry ingredients, and stir until moistened. Fill greased muffin tins 2/3 full. Bake at 400 degrees for 15 to 20 minutes. Makes 1 dozen.
