CRISPY HALF BAKES 
2 med. potatoes (about 2/3 lb.)
2 tsp. melted butter
1 tsp. lemon juice
2 tbsp. grated Parmesan cheese

Cut potatoes in half lengthwise. Brush cut surfaces with a mixture of butter and lemon juice. Combine cheese and pepper. Dip cut side of potato halves into mixture to generously coat. Place cut sides down on well-greased baking sheet. Bake at 375 degrees for 25 to 30 minutes or until potatoes are tender. Makes 2 servings, about 150 calories each.

VARIATIONS:

1. Add dried or chopped fresh herb of your choice to cheese mixture before coating potato. Bake as directed above.

2. Omit butter and lemon juice. Dip cut side of potato halves into prepared pizza sauce, then Parmesan cheese. Bake as directed above.
