RHODA'S DATE AND NUT BREAD | |
Prepare 3 or 4 (2 lb.) cans (one end removed), grease with butter. 1 (10 oz.) pkg. dates 1 c. raisins 1 c. shelled walnuts 1 VERY FULL GLASS BOILING WATER 1 tsp. baking soda 3 eggs 2 c. sifted flour 1 c. sugar 1 tsp. vanilla Cut dates in small pieces (about 3 or 4 to each date). Cut nuts in small pieces. Measure all ingredients. Put nuts, dates and raisins in bowl; pour glass of boiling water to which baking soda has been added over the nuts, dates and raisins. Add eggs, flour, sugar and vanilla. Mix well with heavy or wooden mixing spoon. Fill cans slightly more than 1/2 full. Place in preheated 350 degree oven. Check after 45 minutes, may need 5 or 10 minutes more. STAND CANS UP. I, Rhoda, usually double this recipe and make 7 or 8 cans. Wrap in Saran and tinfoil (out of can). Can be frozen. |
