GERMAN PANCAKES 
APPLE FILLING:

4 lg. Golden Delicious apples, peeled & thinly sliced
1/4 c. hot melted butter
1/4 c. sugar
1/8 tsp. nutmeg
1/8 tsp. cinnamon

Saute the sliced apples in the hot melted butter for several minutes. Add sugar and continue to cook about 7 to 8 minutes longer, turning often. Apples should be crisply tender, not too soft. Season with nutmeg and cinnamon; mix well.

BATTER:

3 lg. eggs
3/4 c. cool milk
3/4 c. sifted all-purpose flour
1/2 tsp. salt
1 tbsp. butter

Combine all ingredients except butter. Beat with mixer 2 to 3 minutes. Melt butter in 10" or 11" heavy aluminum or cast iron skillet. When hot, pour batter and bake 400 degrees 15 minutes. Lower to 350 degrees and bake 10 minutes more. When pancakes puff up in center, puncture well with fork.

Remove onto long platter, fill with apples and fold over. Drizzle 2 tablespoons butter over the top and sprinkle with cinnamon sugar.
