STRAWBERRY COFFEECAKE 
1 1/2 c. sifted all-purpose flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. cinnamon
1 egg, well beaten
1/2 c. milk
1/4 c. melted shortening
1/2 c. frozen strawberries, thawed & drained
Few drops lemon juice
Streusel Topping

Sift dry ingredients together into mixing bowl. Combine egg, milk and shortening. Pour mixture into dry ingredients and mix well.

Turn into well oiled 8 x 8 x 2 inch baking dish. With knife handle make depressions in batter. Fill with strawberries mixed with the lemon juice. Sprinkle with Streusel Topping. Bake in hot oven (400 degrees) for 30-35 minutes.
