BLUEBERRY MUFFINS 
1 egg
1/2 c. milk
1/4 c. salad oil
1/2 c. sugar
1 1/2 c. self-rising flour
1 c. blueberries

Mix egg, milk and oil together. Add sugar and flour. Mixture will be lumpy. Fold in blueberries. Put in greased muffin pan. Bake at 400 degrees for 20-25 minutes or until golden brown. Makes 1 dozen large muffins or 2 dozen mini muffins.
