COWBOY COOKIES 
3 c. flour
1 tbsp. baking powder
1 tbsp. baking soda
1 tbsp. cinnamon
1 tsp. salt
3 sticks butter (room temperature)
1 1/2 c. white sugar
1 1/2 c. light brown sugar
3 eggs
1 tbsp. vanilla
3 c. semi-sweet chocolate chips
3 c. old-fashioned rolled oats
2 c. sweetened flake coconut
2 c. chopped pecans

Preheat oven to 350°F. Mix flour, baking powder, baking soda, cinnamon and salt in a bowl. In another bowl, beat butter on medium speed until smooth and creamy, about 1 minute. Gradually beat in sugars and continue beating for about 2 minutes. Beat in eggs one at a time and add the vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.

For each cookie, drop 1/4 cup of dough onto an ungreased cookie sheet. Space 3-inches apart.

Bake until the edges are lightly browned, about 17 to 20 minutes.
