FRIED SAMHAIN "TOADS" 
1 egg
1 cup milk
1 tablespoon molasses
2 tablespoons honey
1 cup flour
1/4 teaspoon salt
1/4 teaspoon baking soda
2 teaspoons baking powder
1 cup stone-ground cornmeal

Beat the egg, add milk, molasses, and honey. Blend dry ingredients; stir into egg mixture. Batter should be soft, but firm enough to stay on spoon.

In a deep pot, heat cooking oil to 375°F. Using a soup spoon, gather up a dollop of batter and, using another spoon to push it off, drop it carefully into hot fat. It will expand into outlandish forms when it hits the hot oil. Only cook a few at a time until golden.

I like to sprinkle with powdered sugar.

Serve with Apple Cider Syrup.

Apple Cider Syrup:

Pour a quart of fresh apple cider into a pan and bring to a boil. Let it simmer until it is a thick syrup.

Makes 1-1/2 cups.
