BAKED WINTER SQUASH 
3 lbs. squash (any type)
1/4 c. chopped onion
1 c. crushed soda or Ritz crackers
Salt and pepper to taste
2 eggs, beaten (or only beaten whites)
1 tbsp. sugar
1/2 c. butter melted

Cook squash until tender, mash with fork. Add onion, 1/2 cup crackers, salt, pepper, eggs, 1/4 cup butter, and sugar. Pour into buttered 2 quart baking dish. Mix crumbs and butter and sprinkle on top. Bake at 375 degrees for 1 hour until top is browned. 6 to 8 servings.
