GUMDROP COOKIES | |
1 c. shortening (1/2 butter, 1/2 Crisco) 1 c. white sugar 1 c. brown sugar 2 eggs 2 c. sifted flour 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 2 c. quick cook oats 1 c. shredded coconut 1 c. cut up gumdrops (fruit flavored minus the licorice ones) Cream shortening and sugar until blended. Add eggs and beat until smooth. Sift dry ingredients and add to the creamed mixture. Stir in gumdrops, then oats, then coconut and drop by teaspoons onto greased cookie sheet. Bake at 350 degrees for 10 to 15 minutes. Yields about 6 dozen. (May have to add more flour if they go too flat while cooking.) Should be rather chewy rather than crisp, so watch carefully while baking. |
