OCEAN CAT CAJUN STYLE | |
2 lbs. ocean catfish 2 tbsp. butter 3 green onions, finely chopped 2 cloves garlic, pressed 1/2 c. green peppers, finely chopped 1 (15 oz.) can tomato sauce special 1/2 tsp. Cajun seasoning, to taste Heat butter in skillet at 250 degrees. Saute onion, green pepper and garlic for two minutes. Add fresh fish and saute 3 minutes on each side, season with Cajun seasoning. Cover fish mixture with tomato sauce. Put lid on skillet and simmer 6 to 8 minutes. Serve with a large platter of rice, tossed green salad and crusty french bread. Serves 8. |
