APPLE PIE SQUARES 
FILLING:

6 apples

Peel and slice 6 apples, or enough to fill jelly roll pan (or 1 can pie mix).

1 to 1 1/4 c. sugar
1 tsp. cinnamon

Sprinkle sugar and cinnamon over apples. Allow to stand while you prepare the crust.

CRUST:

2 1/2 c. flour
1 c. shortening
2 tsp. sugar
1/2 tsp. salt
2 egg yolks plus milk to fill 2/3 c.

Mix dry ingredients and shortening as for pastry. Add milk and egg mixture. Mix well. Roll out 1/2 of the dough into a jelly roll pan. This dough is easily workable in the pan with your hands or roll out.

Spread with light coat of egg whites, add apple mixture and cover with remaining dough. Spread with egg white mixture. Drizzle powdered sugar icing over when still warm. Bake in a 10"x13" pan for 35 to 40 minutes. Freezes well.
