BASIC WHITE SAUCE 
1 c. water
1/2 c. instant non-fat dry milk
1 1/2 tbsp. all-purpose flour
1/4 tsp. salt
Pinch of white pepper
3 drops butter flavoring

Combine first 3 ingredients in a heavy saucepan, stirring until smooth. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Stir in remaining ingredients. Yield: 1 cup. 16 calories, 1.4 g protein, 0 g fat, 2.5 mg cholesterol, 57 mg sodium, 48 g calcium per tablespoon.

For thin white sauce, decrease flour to 1 tablespoon. Yield: 1 cup. 15 calories, 1.4 g protein, 0 g fat, 2.3 g carbohydrates, 1 mg cholesterol, 57 mg sodium, 48 mg calcium per tablespoon.

For thick white sauce, increase flour to 2 tablespoons. Yield: 1 cup. 17 calories, 1.5 g protein, 0 g fat, 2.6 g carbohydrates, 1 mg cholesterol, 57 mg sodium, 48 mg calcium per tablespoon.
