BASIC WHITE SAUCE MIX 
1 c. all-purpose flour
1 c. butter
4 tsp. salt
2 1/2 c. nonfat dry milk

Mix all ingredients in a large bowl and cut with pastry blender until crumbly. Store in covered jar in refrigerator and use as needed.

FOR WHITE SAUCE:

Place 3/4 cup of mix in heavy saucepan. Add 1 1/2 cups cold water slowly, stirring constantly. Cook and stir until sauce is smooth and thickened.
