BASIC WHITE SAUCE 
THIN SAUCE:

1 c. milk
1 tbsp. flour
1 tbsp. fat
1/2 tsp. salt
1/2 tsp. pepper

MEDIUM SAUCE:

1 c. milk
2 tbsp. flour
1 tbsp. shortening
1 tsp. salt
1 tsp. pepper

THICK SAUCE:

1 c. milk
3 tbsp. flour
2 tbsp. shortening
1 tsp. salt
1 tsp. pepper

VERY THICK SAUCE:

1 c. milk
4 tbsp. flour
2 tbsp. shortening
1 tsp. salt
1 tsp. pepper

Melt shortening, add flour and cook but DO NOT brown. Add milk, stirring constantly to prevent lumping. Add seasonings and mix well. A good base for soup, gravy, cream dishes, cheese dishes or served over vegetables.
