ROLLS WITH HONEY 
2 pkgs. dry yeast
1 c. warm water (105 to 115 degrees)
About 3 1/2 to 4 c. all-purpose flour
1 tsp. salt
1/2 c. butter, melted
1 egg, beaten
3 tbsp. honey
2 tbsp. butter

Dissolve yeast in warm water in a large mixing bowl. Combine 2 1/2 cups of flour and salt; add to yeast mixture. Mix well. Add 1/2 cup butter, egg, and honey; stir together. Add enough flour to form a stiff dough.

Place in a warm place after putting in a well greased bowl; cover and let rise until double in bulk, about one hour. Punch down; turn out on floured board and shape into small balls. Place into muffin cups (3 balls each cup).

Cover and let in warm place about 25 minutes. Brush tops with melted butter and bake in 400 degree oven for 12 minutes or until golden brown. Makes about 2 dozen.
