MRS. HARVEY'S WHITE FRUIT CAKE 
1 c. sugar
5 lg. eggs
1 3/4 c. flour
2 sticks butter
4 c. pecans, chopped to desired size
3/4 lb. candied cherries
1 lb. candied pineapple
1/2 tsp. baking powder
1/2 oz. vanilla flavoring
1/2 oz. lemon flavoring

Mix or cream sugar, well beaten eggs and flavorings. Add 3/4 cup of flour with baking powder. Dredge fruit and nuts with remaining flour; add to other ingredients. Put in tube pan lined with waxed paper. Put in cold oven. Bake at 350 degrees for 3 hour. Cool on rack.

Since Mrs Harvey won the contest for this wonderful cake, she has changed the amount of vanilla and lemon flavoring to 1 ounce each. Make the cake twice and yummy!

Cooked in one hour and forty five minutes at 350°F. Taste was still good. I will cook next one at lower temperature.
