SPINACH - STRAWBERRY SALAD 
1 lb. fresh spinach
1 pt. fresh strawberries
6 lg. mushrooms
3-4 thin slices red onion

DRESSING:

3/4 c. pale colored salad oil
Juice & pulp of 1 lemon
1/2 c. heavy syrup from sweetened canned peaches
1/4 tsp. salt
2 drops almond extract

Wash and pick over spinach. Use only leaves which have not been bruised. Dry thoroughly by gently squeezing in towel. Wash, dry and slice berries and mushrooms.

Combine dressing ingredients in blender. Blend for 1-2 minutes. Toss with spinach, onion, berries and mushrooms just before serving. Use just enough dressing to moisten. Serves 6.
