SHRIMP CREOLE 
1/2 c. chopped onion
1/2 c. chopped celery
1/2 c. chopped green pepper
1 garlic clove, minced
3 tbsp. salad oil
1 (8 oz.) can tomato sauce
1 (1 lb.) can tomatoes (2 c.)
1 1/2 tsp. salt
1 tsp. sugar
1/2 tsp. thyme
1/2 tsp. bay leaves
Dash of Tabasco sauce

Cook onion, celery, pepper and garlic in oil until tender. Add tomatoes, tomato sauce and seasonings. Simmer 45 minutes. Cook until mixture thickens. Add 1 pound small cooked shrimp and cook 5 more minutes. Serve over yellow rice.
