HASH BROWN POTATO CASSEROLE 
1 lg. bag hash brown potatoes, shredded type
1/2 can cream of mushroom soup
3 oz. sour cream
1/4 c. butter, melted
1/2 tsp. salt and 1/4 tsp. pepper
1/2 c. chopped onion
3 c. Rice Chex cereal, crushed
1 c. grated Cheddar cheese

Grease a large casserole dish. Break up potatoes thoroughly. Combine soup, sour cream, onion, cheese, salt and pepper; mix thoroughly with potatoes. Pour into casserole dish. Mix crushed Rice Chex with melted butter and sprinkle on top of potatoes. Bake at 350 degrees for 45 minutes or until brown on top.
