FRESH TOMATO BASIL SALAD 
Easy, fresh, delicious and healthy.

3 cups cooked multi-colour rotini pasta
1 pint cherry tomatoes, quartered
2 diced tomatoes
1/2 diced red onion
1/4 cup minced fresh basil
1/4 cup white wine vinegar
2 tbsp. olive oil
1 tsp. salt

Combine vegetables, including basil in a large serving bowl. Whisk oil and vinegar together with salt. Pour over salad, gently mix, and serve.

Serves 4 adults in my family along with another item, such as empanadas or fresh bread.
