SWEET POTATO CROQUETS 
1 #3 can sweet potatoes
1 c. sugar
16 marshmallows
2 c. cornflakes, crushed
1/4 c. coconut
1/4 tsp. vanilla or ginger

Drain potatoes then mash. Add 1/2 cup sugar. Cover each marshmallow well with sweet potatoes, then roll in mixture of the coconut, remainder of sugar and crushed cornflakes. Place in pan and brown in 450 degree oven about 2-3 minutes, just enough to get the marshmallow hot.
