HAM BALLS WITH SOUR CREAM 
1 stick butter
1/3 c. chopped onion
1/4 c. chopped green pepper
3 c. ground cooked ham
1 c. soft bread crumbs
1 tsp. horseradish
1/4 tsp. pepper
2 eggs, well beaten
2 tbsp. flour
1/2 c. water
1 c. sour cream
1/2 tsp. salt
1 tbsp. chopped parsley

Cook onion and green pepper in butter until lightly browned. Remove onion green pepper. Save butter for browning ham balls. Mix together onion, green pepper, ham, bread crumbs, horseradish, pepper, and eggs. Shape into small balls about the size of a walnut. Brown balls on all sides in hot butter and remove balls to a hot platter or serving dish. Pour off butter drippings, reserving 2 tablespoon for gravy. Add flour to drippings and stir well. Add water and cook, stirring constantly until thickened. Stir in sour cream and salt and cook until heated through. Pour gravy over the ham balls and sprinkle with parsley.
